happy dance monday!

hi all! 
happy monday! !
what's on the agenda in your world today?
do you ever wish you could not work?
i do.
or at least do something that is fun...all the time!
i am still working on that.
do you ever have so many ideas, projects, lists
that
it
seems
almost
impossible to get it all
DONE??
i do.

boo. whoooo.
(insert fake crying...or maybe real tears).......
i have to get back into list making and time organization skills. i feel that my days run
together with no time for anything.
with me going back to school, it's a constant struggle to accomplish it all.

what do you use to stay organize?
i just bought a new planner.
i love new pens, notebooks, paper, etc.
i can not ever NOT walk down "those" aisles when i visit target, walmart or anything inbetween.
not even kidding.

so please share ways that keep you organized. i would love to hear....

back into IT! and a fall recipe too!

why helloooo there blends! (remember, blog+friends)....

has
been
WAY
too
long!

because my life often becomes busy or sad or crazy or for some other reason,
i
tend
to
pull
away from my blog.

there is not any good reason.
but
i miss
it.
i
MISS
YOU!
i want to get back into my blogging.
let me fill you in on what is going on in my life:

princess # 1 passed her state boards and is now a FULL TIME, ICU, registered nurse!
yep. i know. (i dont feel old enough to have OLD children!) what the hey?!
princess # 2 is working as a FULL TIME event planner. yayyy! i dont think she is loving
her job quite like she thought. i just think she needs to find a more specific
event planning facility.....it's ok...this looks great on a resume!
AND
princess #3, the baby, left for college. fashion design major.
ahhhhh. empty nest syndrome has set in....
so to help with all this,
look what i got....

he is such a sweetie pies and melts my heart.
i feel like we have a toddler again.
there is never a dull moment.
EVER.

and then I decided to go back to school....working on my masters degree. oye.
i feel mentally challenged. a lot.

i started back at my part time wellness/coaching RN job so that is keeping me busy....
and i really, really, really am working on getting my
etsy shop up and running.

what have you all been up to?

fall is quickly approaching and i am loving apple, cinnamon and pumpking scents....

here is a yummy recipe for you! i guarantee you will LOVE it.

Pumpkin Bars

Ingredients


4 eggs
1 2/3 cups white sugar
1 cup vegetable oil
1 (15 ounce) can pumpkin puree
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
1 (3 ounce) package cream cheese, softened
1/2 cup butter, softened
1 teaspoon vanilla extract
2 cups sifted confectioners' sugar 

Directions


Preheat oven to 350 degrees F (175 degrees C).

In a medium bowl, mix the eggs, sugar, oil, and pumpkin with an electric mixer until light and fluffy. Sift together the flour, baking powder, baking soda, cinnamon and salt. Stir into the pumpkin mixture until thoroughly combined.

Spread the batter evenly into an ungreased 10x15 inch jellyroll pan. Bake for 25 to 30 minutes in preheated oven. Cool before frosting.

To make the frosting, cream together the cream cheese and butter. Stir in vanilla. Add confectioners' sugar a little at a time, beating until mixture is smooth. Spread evenly on top of the cooled bars. Cut into squares.

frosting for a cause!

hi all!
yes, it's been a while.

i have had a lot going on and i have taken
some time
for
my family and i.
hopefully
things
will finally be calm
some day
again....

but for now, please head over

i made my donation to the susan g. komen
fundraiser 3 day, as well as baking
cupcakes for our local hospice
center!!!

it is a wonderful opportunity to share
your story of how cancer has
affected you, as well as share
your love of baking, while helping
out those affected by cancer at the same
time.

princess # 2

for realz diamonds. 

i am so stinkin tired of rain, wet and cold.
i am THAT girl who will wear flip flops as long as it is 
over

but....

i am still wearing boots. 
yes.
winter boots.
what the hay?!?

anyway, 
princess # 2 had her fabulous day today! 
and thankfully, it was sunny for 
graduation. 
bless her stinkin heart!

and i have to say the tears were flowing before i even got there.

i still am in shock.....it seems like yesterday she was a 3 yr old
flipping her long hair, 
staring in the mirror,
outrightedly, (is that a word) admitting 
to herself, (and anyone listening)....

"i am sooooo cute"....(with a little hair flip as well!)

at that point i realized, i needed to stop ASAP telling the kid how flipping adorable she was.

you've come a long way tiffany lynne....
and i, could not be more proud

princess # 3. will graduate from high school. yep. my little peanut butter cup is all done with school.
holy heck.
she will be going off to college in the fall to pursue a degree in fashion design.

i cant believe it. i seriously get tears and choked up everytime i think about it.

soooo that, my loves is what is going on in my life......

and its monday, again

rain rain go AWAY! 
seriously.
dear mrs. spring. i realize with a strong passion
that the 
grass, the trees, the tulips and all the other flowers need
mucho H2o to fluorish. 

HOWEVER,
we havent been dry since, um, i don't know like NOVEMBER?
it has either snowed every day or rained.

OYE VAY. 

we did have a 77  degree sunny day on saturday, which was a blessing, seeing 
how i was sitting outside at a track meet all. day. long.

(not complaining in the least)
it's princess # 3's senior year. yeoww! sad. sad. sad.

i even scored a wee bit of sun on this nose. 
(i have sworn off tanning, well, fake tanning, and let me tell you:
I FREAKING MISS IT.

tanning beds are 15 mins of pure warmth and bliss. 
i mean who cares if it causes undue wrinkles and skin cancer, right?!?

well, apparently, my health conscience did get the best of me, because i quit. 
the fake tanning anyway. 
not saying i won't lay out by the pool til i am roasted like vegetables.....
just sayin i quit the 'bad' kind of tanning.

monday,funday!

hello lovies!
i am trying to be excited about jumping back into the work week.
i typically ALWAYS have the monday morn blues.
but i am trying to view life differently and
appreciate
every
little
thing
that
is
brought
my way.

weekend was uneventful. i sat at princess # 3's high school invitational track meet on friday night.
brrrr.
it was flipping freezing.

this poor lil gal is having relationship issues and has been a basketful of tears lately.
when you are young and in love.
(or old like, me)
you know what it feels like to have your heart ripped out.

poor lil babe. my heart hurts for her.

saturday:

went up to college to visit princess # 2.

here's a recap of our visit.
took g'ma along for the ride. she loves hanging out with us.

first of all, i should say while parading thru the mall, we came
across these:

yep. utterly HUGE, ridiculously ENORMOUS,
easter bonnets!
yikes.
or i guess, kentucky derby worthy bonnets?
your call.

of course we had to have a fashion show right there in the middle
of the aisle. 




 even my sweet 72 yr old mom....isnt she adorable?!?

like, people really wear these???
lol.
actually, i have to admit....there were a couple that i loved.

i guess, i can tend to be a little extreme in the fashion sense tho....

we made a stop at a place called the cookie jar...
